Chunky Guacamole

There's nothing quite like the rich, flavorful, yet mild flesh of a perfectly ripe avocado. Why's it so good? Well, it's got healthy fats and is packed with other nutrients and beneficial compounds - the benefits of eating avocado are too numerous to list here. This guacamole recipe is one of our favorite ways to enjoy the emerald fruit - super easy to make and a total pleaser for you and your buds. So keep extra ingredients on hand - you might need to make a second batch!


  • 2 ripe avocados 
  • 1/2 medium tomato, seeded and diced small
  • 1/4 cup white onion, diced small
  • Juice of 1 lime
  • 1 canned Chipotle pepper, minced (just one, not one can)
  • 2 tablespoons cilantro, or to taste, chopped
  • Pinch Kosher salt


  1. Halve avocados lengthwise and remove pit.
  2. 2. Scoop out flesh with a large spoon into a bowl and mash up a bit. I said "a bit" - not into soup.
  3. Add diced tomato, onion, lime juice, chipotle, cilantro and blend all into a beautifully chunky mixture.
  4. Season guacamole with salt to taste.
  5. What are you waiting for? Start eating!
